I found out recently I was cooking my eggs all wrong an was wondering why both my scrambled and overeasy fried eggs on saturday mornings always turned out to be under par.
here are some tips I learned :

for sunnyside up/ overeasy fried eggs
--------------------------------------------
instead of butter or pam use olive oil, I thought its flavor would show through but it doesnt, its healthier , it wont burn and does an overall better job. if you like garlic with your eggs ( i do) use a garlic infused olive oil.

for scrambled eggs.
low and slow. common myth is a dash of milk makes your eggs fluffier, but in truth any liquid will and milk can burn. use a teaspoon of water per egg instead,
again if you like garlic add some fresh chopped garlic to the mixed eggs before they hit the skillet , and use olive oil!! instead of pam or butter.
stir frequently, low and slow

for fried over easy eggs
I have found with a high quality non stick skillet esp a ceramic coated one a spatula or "flipper" is not even needed. invert the pan so the eggs slide to the low corner and flip them with a flick of the wrist like your sauteeing veggies - the olive oil makes all the difference.

anyone else have good egg/ omlet/ recipes , tips or tricks

funny timing for this post as i've been on an egg kick lately.

one of the ways i grew up 'cooking' eggs was in the microwave.

3 eggs into a microwave safe bowl, splash of milk, beat the hell out of them. microwave for a minute. break up whatever egg has formed with a fork. microwave another minute. toss on some cheese. 30 seconds and it's done. by doing them in the microwave like this they really hold in their heat. nothing is worse than cold scrambled eggs. depending upon the size of the dish/bowl you can do a single egg and it forms the perfect shape to toss on an english muffin.

i also recently started doing a fried egg for a bagel/english muffin.

i too use a tiny dash of olive oil and let it heat up. drop the egg in. break the yolk after 10 seconds. let it sizzle for 30-40 more seconds. flip. add cheese. remove after cheese is melted. i don't like runny yolk.

this is from the other morning.

For most things, low and slow is usually a better option.

I use fresh garlic, period (if I have it). Garlic 'infused' olive oil is sub par, IMHO.

Try poaching eggs. It's a great way to impress bitches. And it's like the healthiest way to eat eggs.

Also, the pan you cook in can have a big impact on how things will turn out and how they cook.

I like making poached eggs and putting it on some lightly buttered toast with some salt and pepper but most of the time I just make scrambled eggs without butter/pam/oil. Just use a good non-stick pan and add just a little bit of fresh cracked pepper and a little bit of fresh garlic and then some colby jack cheese...

I'm fairly simple. I like em hard boiled or over hard (broken yoke). touch of sea salt, generous on the black pepper, splash of oil in the pan.

Non Stick Spray,50-50 Full egg-Egg Whites. No salt, lots of pepper. Kraft single cheese, pepperjack. If I have turkey or ham, I'll toss it in the pan first to cook, then just throw my eggs on top and cook from there. Med-high temp. I always let mine cook long enough to have a tad bit of brown on them.

hard scrambled is best (for me) with a bit of seasoned salt and a pinch of oregano. to really enjoy my eggs I love the just caramelized bits - gives the eggs a bit of bite.

I may try the Ramsay 'method' from the above video but I just don't know that I'm going to enjoy eggs that soft/runny...
