Default Smoking Meats

Does anyone smoke meats here? What kind of smoker do you use? What type of meats do you smoke? What setup do you use?

I have a weber kettle and use indirect heat. I have heard of people making a cover for the lit coals. I normally smoke Beef Brisket, pulled pork, and occasionally RIBS.

I had a custom Yoder Smokers YS640 Competition built a few years back. Got some heavier duty wheels, different color base, and some other additions. Probably (definitely) overkill, but damn easy to use and shouldn't wear out any time soon.

I still plan on changing some things to better fit my needs, but overall, no complaints.

As a nation, we began by declaring that ”all men are created equal.” We now practically read it “all men are created equal, except negroes” When the Know-Nothings get control, it will read “all men are created equal, except negroes, and foreigners, and Catholics.” When it comes to this I should prefer emigrating to some country where they make no pretence of loving liberty -- to Russia, for instance, where despotism can be taken pure, and without the base alloy of hypocricy. - Lincoln

Used to use an Oklahoma Joe offset, now I use an Ugly Drum. The offset was too much maintenance and burned too much fuel.

I would really like to pick up a gravity fed cabinet smoker but dont use it enough to justify the cost.

This is an erly picture when I had it setup to run a pellet smoker on the side to cold smoke cheese and salmon.

I believe this was made on the offset.

I use a Weber smokey mountain and love it. It will hold 225-250 for hours and all i'll have to do is add wood chunks for smoke. Love to smoke wings, ribs, pork butt, brisket, anything really.
